Our lovely Mumma Preen shares how to bake her carrot cake with help from Sophie! Plus a peek into her wardrobe!

Recipe - Carrot cake

Pre heat oven to 160 degrees

3 cups Wholemeal flour
2 cups Raw sugar
1T Baking Soda
1/2t salt 
1t Baking Powder

Sift it all together

Beat 4 eggs in a bowl 
Add 1 cup Oil, 1t vanilla essence
Beat well

Combine both lots of ingredients

Stir in 3 cups grated carrot
1 cup Walnut
1 cup Raisons
1 cup dates
1 cup mashed banana
1/2 coconut
1 cup mashed pineapple

Put in the oven for 1 hour and half

Cream cheese Icing

4oz cream cheese
2 cups icing sugar
2oz butter
1tsp vanilla

Melt butter, soften cream cheese and add icing sugar + vanilla and beat to combined 

Add walnuts on top
